Lush and dense, white kale serves a dual role as both a filler and main attraction to many bouquets, centerpieces and floral decorations. Although named white kale, it actually has a light green center that gradually darkens to a deeper green outer layer. When fully bloomed, kale measures an impressive 6” to 8” and is long lasting. Bearing a strong resemblance to roses and peonies, white kale can be grouped together in bunches and tied with a ribbon for a charming wedding bouquet. What we love about white kale is how versatile it is and its natural ability to take on a rustic or elegant personality depending on what flowers they are placed with. For a soft palette, try pairing them with green antique hydrangea, green tea roses, lacey dusty miller and white limonium. When it is a rustic design you are after, accent them with lisianthus, hypericum berries, and Veronica. Due to their voluminous size, white kale is a great centerpiece floral. All it takes is adding a few other flowers such as spray roses and a delicate filler such as Queen Anne’s lace for a sophisticated touch, or scabiosa pods and dahlias for a casual vibe.
